Veggie Paella

Paella in the making!
Quick, easy and delicious! Paella is a Valencian rice dish that originated in its modern form on the east coast of Spain.
Serves 6

Ingredients:
1 teaspoon olive oil
8 ounces seitan strips (vegetarian "white meat")*
2 cloves garlic, minced
1 teaspoon garlic powder
2 cups butternut squash cubes (frozen)
1 cup yellow squash (1 medium)
1 cup zucchini (1 medium)
1 cup carrots, chopped (2-3 carrots)
1 cup asparagus, chopped into bite-size pieces
1 can diced tomatoes (14-ounce)
2 cups green beans (frozen)
1/8 teaspoon all-spice
1/2 teaspoon paprika
3 cups cooked brown rice
1 cup vegetable broth
Salt and pepper to taste

*Or substitute 8-ounces of chicken sausage!

Directions:
1. In a large pot or skillet heat oil and add seitan, garlic and garlic powder.
2. Add butternut squash, yellow squash, zucchini, carrots, asparagus, peas, tomatoes, all-spice and paprika. Simmer and cook for 10 minutes.
3. Add rice and vegetable broth and cook for 10 minutes or until liquid is absorbed.
4. Season to taste and serve!

Slowcooker Veggie Chili

Gotta love beans!
If your are short on time this holiday season, try this recipe! It's really quick to put together and full of flavor.

Ingredients:
1.5 cups sweet onion, chopped (1 medium onion)
1 cup red bell pepper, chopped (1 medium pepper)
2 cans (14.5 ounces) kidney beans, drained and rinsed
1 can (14.5 ounces) cannellini beans, drained and rinsed
1 can (14.5 ounces) diced tomatoes
2 cups corn (frozen)
1 cup mild salsa
2 cups vegetable broth
sea salt and chili powder, to taste

Directions:
1. Combine all ingredients in a slow cooker.
2. Cook on low for 6-8 hours.
3. Season with chili powder and salt to taste.

Additional toppings: sour cream, plain yogurt, shredded cheddar cheese.

The Skinny on Snacking

The healthiest eaters snack more, in fact, 36% more per a new report out by The NPD Group. As we all head into the holiday season which kicks off next week with Thanksgiving, try sticking with a snacking routine to help you through the holidays without packing on the pounds. Here are some suggestions of what to snack on:

- Trail mix popcorn: Pop a batch of air popped popcorn and then in a large bag or container, toss in a handful of dried cranberries and a handful of your favorite nuts! Then place 2 - 3 handfuls of the snack in a bowl for a sweet and salty treat.

- Salsa hummus with sliced veggies: Combine equal parts hummus and salsa for a delicious dip for cucumbers, red peppers or carrots. Tip: every few days slice a bunch of vegetables and keep them in a clear container at eye level in the refrigerator to visually remind you to snack on them!

- Peanuty pear slices: Slice a pear and then thinly spread crunch peanut or almond butter on each slice (about 1 tablespoon total) for a tasty twist to the traditional pear. 

- ALT skewers: On tooth picks or mini skewers add a cube of avocado, a few bite size pieces of lettuce and finish with a grape tomato. These are fun to serve to guests! Tip: Eat or serve these quickly because avocados brown quickly once they are sliced.

- Fruit and nut bars: Keeping a bar or two in your purse, work bag or car is a must! It will provide a single serving snack that will fuel you up and keep you going. Some of my favorite brands: KIND Snacks bar, Larabar or Clif Mojo Bar Peanut Butter Pretzel. When you are in a hurry this can even stand-in for lunch, pair it with a piece of fruit and a bottle of water!

Your Question... answered!

Q: I need breakfast ideas to lose 20-pounds!And I spin and do yoga four days per week.

A: First, eating breakfast is key! Simply eating breakfast may help you meet your weight loss goals because stats show people who eat breakfast weigh less. Plus, something to consider is new research from the British Journal of Nutrition (October 2012) found guys that exercise before breakfast burn 33-percent more fat compared to those who exercise after breakfast. Although, keep in mind, depending on the intensity and duration of your workout, breakfast maybe best to fuel your body before you workout.

What to eat? Combine whole grains, fruit/ vegetables and protein. The fiber from the grains and fruit/ vegetables will help to keep you full plus the protein will help with longer lasting energy to keep you going all morning long.

Here are some ideas to try:
- Oatmeal (prepared with low fat milk or almond milk) topped with sliced bananas, chopped walnuts and a drizzle of honey.
- Whole grain cereal with sliced strawberries (tip: fill 1/2 of your bowl with strawberries!) and low fat milk or almond milk
- Breakfast scramble (a personal favorite) paired with a slice of whole wheat toast, click here for the recipe
- On the go: bring a bar like (KIND Snacks Bars*, Nuts.com Energy Squares* or Clif Bar Mojo Peanut Butter Pretzel) and
- Slice of whole wheat naan or pita bread topped with a thin layer of hummus, cucumber slices and a drizzle of honey mustard

Put These Products In Your Cart

Sometimes at the grocery store, you may see new products yet wonder, how do they taste and are they really healthy options? If you are like me and love to try new products, here is a product round up of some tasty (and nutritious) new products out that I discovered this past weekend at the annual Academy of Nutrition and Dietetics conference.

I tried the Carrot, Mango & Orange flavor, they were so delicious! These snacks are made with 50% vegetables, coconut milk and have no added sugar! Quick tip: Mix these with whole grain cereal for a great on-the-go snack.

Another great product from this company is their happy squeeze line which includes varieties like: coco strawberry (made with coconut milk) and fruit & veggie twist (apple & purple carrot).

Quaker Oatmeal - Real Medleys
What is awesome about these little cups of oatmeal, all you have to do is add water and they have pieces of dried fruit and nuts in them! Plus they are made with whole rolled oats. The type pictured left includes cherries and pistachios. Each serving has 290 calories and 5 grams of fiber.

Other flavors in this line include: peach and almond, apple walnut and summer berry.



Odwalla Smoothies for Kids
These drink boxes are something even your children will be excited about! Each box has the equivalent to a 1/2 cup of fruit and no sugar added. They are available in Strawberry Banana Jungle, Mango Pineapple Island and Grape Berry Prairie flavors and they taste GREAT! They are available in the refrigerator section of the grocery store. When you send these for lunch they are recommended to no be left unrefrigerated for longer than 12 hours and try freezing them first for more of icy texture at lunch time!

More Veggies and Fruit

While most people would agree on the fact that fruit and vegetables are healthy, the amount that most people eat still falls short of the daily recommended goals. In fact most people consume less than half of the recommended 4 1/2 cups of fruits and/or veggies per day. Check out these ways to increase the fruit and vegetables in your eating routine:

- Start your day with a multi-grain pita, topped with hummus and cucumber slices (check out my recent Facebook post for a photo of this!)

- If you are on the go, look for fruit and vegetable snacking options like Starbucks Bistro Boxes that have goat cheese (pictured right) and garden vegetables or fruit and cheese.

- Add vegetables to scrambled tofu or eggs like zucchini, red bell peppers and onions! To scramble tofu: blend 1/4 cup tofu with 1 tablespoon of water, it cooks up and looks very similar to egg whites!

- Keep a bowl of sliced fruit or fruit salad at eye level in your refrigerator! Have this as a snack or as a side dish at meals. Pictured right is a blend of the fruit salad in our refrigerator at the moment.

- Be adventurous, try an new fruits or vegetables like: purple carrots, parsnips, beets, dragon fruit OR new ways to prepare vegetables them like: mashed cauliflower, roasted red peppers, or grilled peaches.

- For a snack have dried fruit and nuts! Just 1/4 cup of dried fruit is equal to a 1/2 cup of fresh fruit and is a great option for increasing fruit intake.

Food Highlights from Shanghai

Eariler this month I was in Shanghai and Beijing, China for work and a to present at a global conference on metabolism. During my stay, checking out the local food scene was part of my focus. The food was delicious!

An interesting Chinese staple that I learned about quickly is congee (picured right), which is basically a simmered rice dish. It's traditionally eaten at breakfast and from what I can tell as far as toppings, anything goes: fresh cilantro, peanuts, chili paste, pickles, fish, vegetables or just plain. Personally I enjoyed it just plain, although I do want to try it with diced pickles because a local woman I met said that is the best way to have congee.

Here's a Congree recipe to try:

Ingredients:

3/4 cup long grain rice
9 cups water
1 teaspoon salt

Direcitons:
1. In a large pot, bring the water and rice to a boil.
2. When the rice is boiling, turn the heat down to medium low. Place the lid on the pot, tilting it to allow steam to escape (the same as you would do when making cooked rice).
3. Cook on medium low to low heat, stirring occasionally, until the rice has the thick, creamy texture of porridge (1 - 1 1/4 hours). Add the salt, taste and add seasonings if desired. Serve with garnishes such as crushed peanuts if desired.

I had the chance to eat dinner at Lvbolang restaurant a famous Shanghai restaurant. This restaurant has hosted world leaders including: President Bill Clinton and President Fidel Castro.

The menu was most impressive and had a large variety of options from braised eel to purse pasteries (pictured right).

My meal was tofu with black beans and steamed rice with the purse pasteries! The pasteries were almost too cute to eat. Everything tasted wonderful. While I can usually eat well with chopsticks it was a little challenging tying to eat the tofu dish! I have to say we would probably eat less at a meal if we ate them all with chopsticks, it certainly slows down the speed of eating!

Antioxidant Monsters

Today I celebrated National Nutrition Month with 4-year olds, making antioxidant rich monsters: cookie monster, elmo, and oscar! The photos were made by little hands. Below are the instructions so you can make your own fun monsters out of fruit and vegetables!



While they were making the snacks, we talking about the health benefits from colorful fruits and vegetables:


Red: lycopene, helps the heart!


Orange/ Yellow: beta-carotene, help the eyes!


Green: colored by chlorphyll, broccoli has indoles which prevent certain types of cancer!


Blue/Purple: Anthocyanins, help promote memory!


Cookie Monster
For the face: Blueberries
For the mouth: Blackberries
For the eyes: Two small cups with vanilla yogurt and a blueberry for the center

Elmo
For the face: Watermelon
For the nose: Cantaloupe
For the mouth: Blackberries
For the eyes: Two small cups with vanilla yogurt and a blueberry for the center


Oscar the Grouch
For the face: Broccoli
For the mouth: Sliced black olives (pits removed)
For the eyebrows: Yellow and red pepper strips
For the eyes: Two small cups with ranch dressing and an olive for the center


Then after the snacks were made all of the little ones snacked! YUM!

Not Your Grandma's Meatloaf!

Meatloaf has worked it's way into our dinner menu quite frequently. I have experimented with all different types of vegetables to add more flavor and variety which really makes it wonderful!!! Here is my meatloaf 'formula':

Ingredients:
1# lean ground beef
3/4 cup whole wheat bread crumbs
1/2 cup shredded beets
1/2 cup shredded carrots
2 tablespoons ground flax seed
1/4 cup beer
2 tablespoons catsup
2 tablespoon ground flax seed
1 egg

Directions:
1. Preheat oven to 350 degree's Farenheit.
2. In a mixing bowl, combine all ingredients and mix well.
3. Press meatloaf into a 9 X 9" baking dish.
4. Bake for 30 minutes, or until well cooked.

Serve with steamed broccoli and baked sweet potato fries!

Meatloaf Nutrition Facts (per serving): 170 calories, 6 grams fat, 2 grams saturated fat, 0 grams trans fat, 70 milligrams cholesterol, 10 grams carbohydrates, 1 gram fiber, 2 grams sugar, 18 grams protein, 25% DV vitamin A, 2% DV vitamin C, 4% DV calcium, 15% DV iron

Simple Toddler Snacks

Planning balanced snacks is a key strategy to your toddlers taste development! After age one your toddler can eat most foods as long as they are not allergic to them and that their chewing and swallowing are well developed. Here are some toddler approved snack ideas that are a little out of the ordinary, which are toddler approved by our little guys.


  • PB Sliders: 1/4 slice whole wheat bread with light spread of peanut butter, topped with slice of banana

  • Mediterranean Platter: 3 - 4 cucumber slices with a tablespoon of hummus for dipping


  • Toddler Trail Mix: 1/4 cup of whole grain cereal (like Cheerios), raisins, and craisins

  • Fruit Slices: 1/2 of a pear sliced (or other fruit, the favorite in our house: mango)

  • Yogurt Cup: 1/4 cup plain yogurt mixed with 1/4 cup berries

  • Nutty Snack: 1/4 cup pistachios (mom or dad remove the shells)

Reminder: According to the American Academy of Pediatrics, portion sizes for toddlers should be 1/4 that of an adults so be careful not to over do it with portions at snack otherwise it could interfere with food intake at meals.

Eat Right With Color

Happy National Nutrition Month! The theme of this month long event is "Eat Right With Color"... which I personally think is an awesome message. We know that people are not eating enough fruits and vegetables yet they provide important nutrients like: vitamins, minerals, antioxidants, and fiber! Plus fruit and veggies are filling and have a relatively low calorie price tag (many are only 50 calories or less per serving). Check out these simple ways to add more color to your eating routine:



  • Top blackened salmon with mango salsa.

  • Add sliced avocado, tomatoes, onions, or dark leafy green lettuce to your sandwich.

  • For snack: grab a small handful of walnuts and dried cranberries.

  • Fill the bottom of your cereal bowl with sliced fruit like strawberries or bananas, this will help your bowl to seem full while keeping your portion of cereal in check.


  • Instead of crackers, choose apple slices with low-fat cheese.

  • Great side for lunch: red pepper slices with hummus (personal hummus favorite: roasted red pepper).

  • Mix in fresh fruit to yogurt.


  • Add a side of fruit at dinner like: applesauce, fresh berries, or sliced mango.

  • Fill at least half of your plate at dinner with fruit and/or veggies!


  • Add a handful of frozen veggies to prepared soups to up the veggie content!

Oscars Party Planning

Are you hosting or going to an Oscars party? Here are some simple party planning strategies.
  1. Strategically place light party foods throughout the house like: fruit platters, shrimp cocktail, air popped popcorn, trail mix.
  2. Put away the candy dishes. One ounce of m & m's has 140 calories, mindless snacking from candy dishes can pile up the calories in a hurry!
  3. Have a 90/10 rule: 90 percent healthy items, 10 percent splurge! This will still allow for plenty of delicious goodies.
  4. Lighten-up party heavy weights. For example: instead of chicken wings, make baked chicken fingers and serve with hot sauce, barbecue sauce, or light ranch dressing. And have plenty of sliced carrots and celery on the side for dipping!
  5. Try a new recipe! Grab my Wasabi Avocado Dip with Crispy Wonton Chips recipe.

Last but not least, focus more on spending time with your guests and take some of the emphasis off of food!

Meatless Monday

I try to make every Monday a "meatless" dinner! This week was falfel with tzatziki sauce and roasted beets. If you have never tried falfel, you must... it's really yummy. Basically it's ground chickpeas that are spiced up. I wimp out and buy the boxed falfel mix (one of these days I will try making my own from scratch)! Falfel are pan cooked with canola oil until crispy (use some cooking spray too to cut down on the amount of oil).

The tzatziki sauce I made from scratch and here is the recipe (See below), it's quick and delicious. To serve falfel: Place the pan cooked falfel on a pita and top with veggies (cucumbers & tomatoes), reduced-fat feta, and tzatziki sauce.

Tzatziki Sauce
16 ounces plain greek yogurt
1 medium cucmber, peeled, seeded, and finely chopped
4 cloved minced garlic
1 tablespoon extra virgin olive oil
2 teaspoons red wine vinegar

Combine all of the ingredients and chill. Serve with falafel.

What Organic Can Do For You

Organic Manifesto by: Maria Rodale, this is a book I need to pick up! Men's Health Magazine this month has a great article about What Organic Can Do For You, authored by Maria Rodale. The bottom line is that the higher price tag you pay at the cash register can get you a return on your investment by helping your health, including: higher phytochemical levels (E.g. antioxidants) in the fruits, vegetables, and juices that you buy, reduced. The article also talks about the potential connection to reduced risk of diabetes and building more muscle and buring more fat. Click here to read the full artcile.

As a mom, one of the most interesting benefits is that organic foods reduce pesticide exposure, which maybe detrimental to human health, especially to high risk groups like pregnant women and children.

cool new product

I just heard about a cool new line of products coming out in 2010 from Del Monte! It's fresh fruit and veggie vending. The release notes that all the items will be under 120 calories, this kind-of caught me by surprise, but from a quick glance, I think the calorie count jumps up because of the dip? Yet, I think even with the dip, this product line looks great because it offers at least an alternative when you're out an about instead of just chips, pretzels, or other 'traditional' snack foods.
