cool new product

I just heard about a cool new line of products coming out in 2010 from Del Monte! It's fresh fruit and veggie vending. The release notes that all the items will be under 120 calories, this kind-of caught me by surprise, but from a quick glance, I think the calorie count jumps up because of the dip? Yet, I think even with the dip, this product line looks great because it offers at least an alternative when you're out an about instead of just chips, pretzels, or other 'traditional' snack foods. skinny version of mornay sauce

Tonight I made a skinny version of Mornay sauce.This tasty recipe invention is thanks to my husband! He's great at adding new flavors to old recipes. Someday maybe it will be on the menu at his restaurant? The skinny version has less cheese, less butter, than traditional Mornay sauce recipes and I made it with low fat milk. It was YUM! Here's the recipe:

Sun Dried Tomato Mornay Sauce
Ingredients:

1 1/2 tablespoons butter
2 tablespoons flour
2 cups fat free or low fat milk
dash of salt (optional)
1 ounce of grated Parmesan cheese
3 ounces sun dried tomatoes

Directions:
In a medium sauce pan, melt the butter. Once the butter it melted, add the flour and mix well.

Add the milk and whisk. Bring the mixture to a boil, stirring frequently.

Once it comes to a boil, let it bubble one minute more, so it thickens.

Then stir in the cheese and tomatoes.

Serve over grilled chicken breasts! YUM!

simple drink recipe

Looking for a thirst quenching drink to keep on hand? Try my homemade lemonade recipe that has less sugar than any pre-mixed type and is tasty!

Molly's Homemade Lemonade
Ingredients:
1 cup lemon juice
3/4 cup sugar
1 gallon water

Combine the ingredients in a pitcher and mix until sugar dissolved!

Serving suggestion: Mix 1/2 lemonade with 1/2 unsweetened iced tea. That is my favorite drink actually (and Arnold Palmer's too)!

recipe for dinner tonight

I'm trying a new recipe for dinner tonight! Thought you may want to try it too, check it out:

Mixed Up Cobb Salad
Ingredients: 1 cup of corn, 2 slices of bacon (crispy & broken up), 1/4 cup crumbled blue cheese, 1 small red bell pepper diced, 1 avocado into small pieces, and 4 ounces of Creta Farms Turkey Breast (diced into cubes)
Directions: Mix up all the ingredients and serve with a drizzle of balsamic vinegar & extra virgin olive oil over a bed of baby spinach!

Wood-Apple juice

Wood-apple (elephant-apple) is a seasonal fruit in Sri Lanka. It's rich with Calcium & Protein.

Ingredients(for three)
  1. one wood-apple (medium size)
  2. 5 - 6 table spoons of sugar
  3. 3 - 4 glasses of water
Steps
  1. Scrape the wood-apple content to the blender
  2. Add 1 glass of water (so that blender blade can rotate freely) & sugar
  3. Blend until you see all the big pieces no more
  4. Add rest of the water & blend for 10 seconds
Things to try
  1. Some add coconut milk instead of water. But I hate it for two reasons. One, coconut takes away the natural taste of wood-apple. Two, I am not good @ making coconut milk. :-)

Strawberry juice

Wify has been asking for strawberry juice for sometime. But I had a hard time finding fresh strawberry on super markets I visit regularly. Finally managed to buy some & here's how the drink came up. Since this is my first time with strawberry, had to be careful with not adding too much water or sugar. I was particularly amazed @ the amount of red colour one piece of strawberry could add in.




Ingredients (2 persons)
  1. 6 pieces of strawberry (medium size)
  2. 3 - 4 table spoons of sugar
Things to try
  1. You can try adding some ripe guava. This will add a nice smoothie taste to the drink.
  2. Mix with yoghurt
  3. Do not add too much sugar or water. Strawberry has some water inside & it's ideal if you blend it first with very little amount of water as possible, taste it & add more water as needed.

tasty meatloaf recipe

Tonight my husband and I made our favorite meatloaf recipe. Try it!

Ingredients: 1 pound lean ground beef, 1/2 cup shredded carrots, 1/4 cup finely chopped sweet onion, 1 egg beaten, 1/4 cup beer, 3 tablespoons ground flax seed, 1/2 cup plain bread crumbs (panko preferably)

Directions: Preheat oven to 350 degrees F. Combine all ingredients together. Press into a 9 X 9" baking dish and bake in a pre-heated oven. Bake for 30 minutes or until it is thoroughly cooked.

Serve with a drizzle of barbecue sauce!

To complete the meal serve with corn on the cob, beets, and green beans!
