Not Your Grandma's Meatloaf!

Meatloaf has worked it's way into our dinner menu quite frequently. I have experimented with all different types of vegetables to add more flavor and variety which really makes it wonderful!!! Here is my meatloaf 'formula':

Ingredients:
1# lean ground beef
3/4 cup whole wheat bread crumbs
1/2 cup shredded beets
1/2 cup shredded carrots
2 tablespoons ground flax seed
1/4 cup beer
2 tablespoons catsup
2 tablespoon ground flax seed
1 egg

Directions:
1. Preheat oven to 350 degree's Farenheit.
2. In a mixing bowl, combine all ingredients and mix well.
3. Press meatloaf into a 9 X 9" baking dish.
4. Bake for 30 minutes, or until well cooked.

Serve with steamed broccoli and baked sweet potato fries!
